DREAMING OF SPRING

For some reason I am really ready for spring to arrive this year. I usually like the cold months and hanging out inside the house. I did not get to work in the yard much this past summer so I am really looking forward to it this year. I came across these pictures that Austin took a few years ago. He was about 8 and we had just gotten the camera. He was very interested in capturing what he thought were really great pictures.

One day I would like to get him a good camera with zoom. I bet he could really capture some great images. Maybe I have a little photographer on my hands! (Well, he is not really little anymore)

try this
Eggless Chocolate Chips Cookies

1 cup spelt (can use white and part whole wheat spelt flour-if refined flour through in a few tablespoons extra)

1 tsp baking powder
1/2 tsp baking soda
1/4 cup sugar (can use brown or white)

1/4 tsp sea salt
1/3 cup pure maple syrup
1/4 tsp blackstrap molasses (can omit)
1 - 1 1/2 tsp pure vanilla extract
1/4 cup canola oil (a little generous 1/4 cup)
1/3 cup non-dairy chocolate chips (but regular chocolate is good if you can have it)

Preheat oven to 350°F (176°C). In a bowl, sift in the flour, baking powder, and baking soda. Add the sugar and salt, and stir until well combined. In a separate bowl, combine the maple syrup with the molasses and vanilla, then stir in the oil until well combined.

Add the wet mixture to the dry, along with the chocolate chips, and stir through until just well combined (do not overmix). Place large spoonfuls of the batter on a baking sheet lined with parchment paper and flatten a little. Bake for 11 minutes, until just golden (if you bake for much longer, they will dry out). Let cool on the sheet for no more than 1 minute (again, to prevent drying), then transfer to a cooling rack. Makes a dozen cookies.
*I find that spelt tends to dry out...so small batches are best (can make half and keep the rest in the freezer)

Over here because we have no snow ever the divide between the seasons is blurred.

Oh my gosh! Those are fabulous photos! He is really, really talented! They look like they are out of a magazine. You're yard is so pretty and you are lucky to have so many butterflies!
